Recipes of Africa

From North Africa to Southern Africa the flavors of African cuisine country-to-country can vary immensely but ultimately are bonded together by the deep rich, intricate, and complex flavors. 

 

We have compiled many dishes from across the continent and invite you to delve into these recipes with excitement.

 

In the north you will find dishes bountiful with spices such as saffron, ginger, and cinnamon thanks to the spice trade of the Sahara Desert.  Olives and olive oil are also a main ingredient in the north in many of the dishes. 

In West Africa you will find many dishes infused with cardamom, nutmeg, ginger, and other locally grown products.  Often these dishes are served with a starchy side dish such as ugali made from cornmeal.

 

In East Africa berbere is king and most spicy dishes include this East African specialty.  Berbere alongside many other locally grown spices are often used to create stews full of flavor served with different versions of soft breads such as injera.    

 

In Central Africa you can find dishes paired with ingredients native to the region such as peanuts, chili peppers, sorghum, millet, yams, okra, and palm oil. These spices are often infused into vegetable, fish, and chicken dishes and served alongside a starchy side dish.

 

In South Africa where the international population has influenced the diet the most you will find flavors and spices from all over the world.  Barbecued meat packed with spices is a specialty in South Africa along with dishes infused from all over the world.
