Boiled Corn and Beans - Kenyan Githeri

Recipe story:
Githeri is a simple, nourishing dish attributed to the kikuyu community in Kenya. This dish is made with corn and beans boiled to make the delicious githeri. It can be served with chapatis ( crusted bread) or rice.
Ingredients:
· 1 tablespoon cooking oil
· 1 medium yellow onion chopped
· 3 tablespoons of tomatoe paste
· 2 cans of kidney beans.
· 3 cups of corn kernels
· 2 potatoes cut into ½ inch cube
· ¾ teaspoon of salt
Directions:
In a large saucepot, heat the oil over medium heat. Add the onion and cook, stirring occasionally, about 10 minutes or until golden soft.
Add the tomato paste and cook, stirring for about one minute.
Add the beans, corn, potatoes, water and salt. Bring to a boil.
Reduce heat to medium and simmer, stirring occasionally, about 25 minutes or until the potatoes are soft and most liquid has been absorbed
Serve alone or with crusty bread or with rice.
