Fried Plantain - Dodo

Recipe Story:


Boiled, dehydrated and pulverized, sweet or savory, plantains are a staple of Nigerian cuisine. For the plantains to caramel ice properly, use ripe plantains. If you can find only green plantains, you can seal them in a paper bag and let them ripen for 2 to 3 days. Enjoy these sweet, tangy morsels on their own, or serve this dish alongside jollof, plain steamed rice, or cooked beans.



Ingredients:


· Plantain

· Vegetable cooking oil

· Salt


Directions:


  1. Slit the plantain using a sharp knife and cut both ends off the plantain. This will make it easy to grab the skin of the plantains.

  2. Diagonally cut into pieces or medium sized slices, mix with a pinch or two pinches of salt and set them aside.

  3. Heat oil in a large skillet over medium heat.

  4. Fry in batches until plantains have reached the desired color (golden brown)

  5. Remove from pan and transfer with a frying spoon to a tray.
