Ful medamas - North African fava beans

This is a tasty vegan meal made of creamy fava beans and eaten as breakfast in many countries across East Africa and the Middle East.


Ful is basically stewed fava beans, prepared with extra virgin olive oil, seasoned with a dash of ground cumin and lemon juice, and finished with fresh veggie toppings. In Egypt, the dish is usually served with warm pita bread.

Ingredients


250 gms Boiled Fava Beans (ful medamas)

200 gms Boiled white chickpeas

1 tsp Cumin Powder

4 cloves garlic

2 tbsp Lemon Juice

2 tbsp Extra Virgin Olive Oil (EVOO)

1/4 tsp Chilli flakes

1/2 tsp Salt

1/2 tsp Pepper


Topping

1 medium Tomato, chopped

1/2 cup Cucumber

1/4 cup Chopped Parsley

1/2 medium White onion or scallion


Cooking Steps


1. Drain the entire content of the fava beans and chickpeas with their liquid in a sauce pan and bring everything to a good boil for 3 - 4 mins.


2. Using the pestel or back of a laddle mash everything well. Not too smooth but little coarse.


3. Add cumin powder, salt, pepper, chilli flakes and mix everything well. Top it with olive oil.


4. You can add all the ingredients for the topping along with some sliced hard boiled egg and make it a hearty breakfast with some pita.
