Nyama choma is Kenya’s unofficial national dish, meaning barbecued meat in Swahili language. The meat is usually goat or beef, served roasted. It is often paired with local bear and side dishes such as ugali.


· Goat or beef meat

· One tablespoon of oil

· 1 cup of warm water

· Kosher or sea salt…1 tablespoon.


  1. Season your meat with oil.

  2. Get your grill going to medium heat.

  3. Stir the salt into warm water until it is fully dissolved. Put the salt solution in a spray bottle.

  4. Grill the meat, basting it occasionally with the salt water, until it is cooked to your liking
