Karantika - Algerian flatbread

Karantika is a tasty Algerian vegan recipe. The dish is a cross between a traditional pancake and a flatbread, and is made with spiced chickpea flour, olive oil and water.
Karantika is easy to prepare, and goes well with fresh, crunchy pomegranate salad.

Ingredients
1 large bowl of chickpea flour
3 bowls of water (about 500 ml)
1 bowl of milk (about 180 ml)
1/2 teaspoon of neutral oil (3 tablespoons)
2 eggs
1 teaspoon of salt
4 servings of cheese in small pieces (2 tablespoons of Philadelphia)
1 teaspoon of cumin
Cooking Steps
Preheat the oven to 180 ° C.
Pour the chickpea flour into a salad bowl.
Make a well and break the eggs there, add the oil and gradually dilute with the liquids.
Season with salt (and pepper), add the cumin and finally the cheese.
Mix well until you get a smooth liquid mixture without lumps.
Pour the preparation into an oiled dish (lightly floured) with high edges.
Bake and cook for 45 min to 1 hour until a thin golden and brownish crust is obtained on the surface and has a compact and shaky appearance (like a flan).
Remove from oven
Sprinkle with cumin
