Lahma Bil Basal - Egyptian beef and onion stew

Lahma Bil Basal is a delicious, flavorful, thick stew that is very popular among Egyptian cuisines. This tasty, onion-heavy dish is simple and very easy to make.

The ingredients for Lahma Bil Basal are stewing beef, onions, bouillon cubes, salt, pepper, bay leaves, butter, water and canola oil. The meat is fried in a mixture of oil and butter, until lightly browned.

The rest of the ingredients are added, and allowed to simmer on low heat for about two hours until the beef is tender and falling apart, and the onions melted to give a rich, thick sauce.

The stew is usually served with rice, pita bread or pasta.

Cooking Time: 120 minutes

Serves: 4


  • 1 lb of beef stew

  • 4 Onions sliced

  • 2 chicken bullions

  • 1 bay leaf

  • 1 tbls butter

  • 1 tbls oil

  • 1/2 - 1 1/2 cups of water (less water for less saucy)

  • salt and pepper to preference


  1. Wash the meat. Put into a saucepan with butter and oil. Cook until all beef lightly browned.

  2. Add sliced onions, bouillon cubes, salt and pepper, bay leaf and stir around while cooking on medium-low heat for 15 minutes.

  3. Add water, approximately 1-1/2 cups, turn to low, cover and cook for 2 hours or more.

  4. Add more water if too dry.

  5. Onions should give enough liquid with initial water you added.

  6. Serve with rice and pita bread
