Lamb stew - Mafe

Recipe story:


Mafe is a traditional stew or sauce In Senegal. It is a delicious, sumptuous chicken or lamb stew, that happens to be full of hearty chunks of carrots, all blanketed in a creamy, slightly tomato peanut sauce.


Ingredients:


· 2 lb. lamb meat, cut into 1 inch

· 1 onion, finely chopped

· ½ cup creamy peanut butter

· 5 tablespoons of tomato paste.

· 4 carrots, peeled and cut into 1 inch pieces

· 3 springs fresh thyme

· 2 bay leaves

· 2 tbsp peanut oil

· Salt

· Black pepper


Directions:


  1. Heat the oil in a heavy saucepan, add the onion, and cook over medium heat until it is translucent.

  2. Add the meat and continue to cook, stirring occasionally, until it is lightly browned on all sides.

  3. In a small bowl, mix the peanut butter with 1 ½ cup of cold water and pour it over the meat.

  4. Dilute the tomato paste with 2 cups of hot water, and pour over the stew, stir well.

  5. Add the remaining ingredients and lower the heat. Cover, cook, stirring occasionally for 1 hour or until the meat is tender.

  6. Remove the thyme springs and bay leaves. Serve hot over white rice.
