Nyama - Kenyan stewed beef

This tasty Kenyan traditional dish consists of bite-sized pieces of meat marinated in a stew made with plenty of tomatoes, garlic, carrots and potatoes.
Traditionally the meat used is usually is beef but lamb, mutton, or chicken are great too.
Prep time: 15 minutes
Cook time: 60 minutes
Servings: 4
Ingredients
1. Vegetable oil.
2. 1 large and chopped onion.
3. 1/2 lbs. of beef, cubed.
4. 1 inch ginger root, minced.
5. 4 sliced cloves of garlic.
6. 1 teaspoon of hot paprika.
7. 1 tablespoon of curry powder.
8. 2 sliced tomatoes.
9. 2 chopped carrots.
10. 1 cubed potato.
11. 1 1/2 cups of beef broth.
Cooking Steps
Place a saucepan over medium heat, add in the oil, and brown the onions for a few minutes.
Increase the heat to medium-high, add in the beef and cook for a few minutes until it becomes brown in color.
Add in the broth, ginger, garlic, hot paprika, curry, carrots, potatoes, tomatoes, salt, and pepper to taste, stir to combine then simmer for about one hour until the sauce becomes thick and the stew reduces in size.
Serve the stewed beef with chapati (if desired) and serve.
