Pepper Soup - West African chicken pepper soup

An easy-to-make comfort food very popular in Western Africa, especially in Nigeria. This hot and spicy meat broth recipe is made with a special blend of aromatic African spices which can be obtained from African stores within your vicinity.


The soup that is usually eaten when the weather is chilly and is very effective home remedy for cold. It can be made with your choice type of meat, including all cuts of beef, chicken, lamb, fish, etc. Other ingredients for this spicy broth include nutmeg, cloves, negro pepper, habanero, chilli peppers, garlic, onions, bullion cubes; and garnished with basil or mint leaves.


It can be served warm and eaten as a full meal with some carbohydrates such as freshly baked bread or rice. If spicy isn't your thing, you can prepare the pepper soup with little or no chilli peppers.

Ingredients


Chicken seasoning

  • 3- 3 1/2 pound 1.3-1.5 kg chicken cut in pieces

  • 1 medium onion sliced

  • 4-5 garlic clove

  • 2 tablespoon chopped ginger

  • 1 Tablespoon paprika

  • 1 bay leaf

  • 1 tablespoon Maggi or bouillon granules

  • 2 green onion chopped whites and green parts

  • 3-5 tablespoon parsley / basil

  • 1-3 Scotch bonnet or habanera pepper

  • Salt and white pepper to taste


Cooking Steps


  1. Place all the spices in the blender or food processor. Pulse until everything is puree

  2. Add to the pot of chicken, add water about 7-8 cups of water.

  3. Bring to a boil and simmer until chicken is tender.

  4. Discard bay leaf, add water if necessary.

  5. Adjust for seasonings and thickness
