Sausage Poached Egg in Tomato Sauce - Tunisian Oja

Recipe story: this is a Tunisian dish made from eggs, it is a dish known for its ease of preparation. Super fast and tasty dish. This dish can be eaten as a whole or with bread.


· 4 to 5v merguez cut into sections (sausage)

· 2 tablespoon olive oil

· 1 tablespoon of tomato purée

· ½ chopped onion

· 3 cloves of crushed garlic

· ½ tsp caraway

· ½ tsp parsley

· Harissa (optional)

· 1 tsp of paprika

· Salt and pepper

· 1 fresh tomato diced

· 1 sliced bell pepper

· 2 eggs.


  1. Pour olive oil into a pan, add chopped onion, garlic and fry for some minutes then add the tomato puree and harissa and simmer for a few minutes. Then add the diced tomato, Marguez and spices.

  2. Add the salt and pepper.

  3. Simmer for 10 minutes on low heat.

  4. When the marguez are cooked add more pepper and when the sauce becomes a little thick, break the eggs in the pan, cook for 10 minutes, cover if you want hard boiled eggs.

  5. Finally decorate with parsley and its ready.
