Spicy Beans and Veggie Relish - South African Chakalaka

Recipe story: Chakalaka is simply vegetable masala packed with flavor. This dish can be spicy or mild depending on the individual. This dish is just simply vegetables spiced up to perfection.
· 2 grated carrots
· 1 chopped medium green and red bell pepper
· ½ chopped yellow bell pepper
· 4 chopped tomatoes
· 2 tablespoon tomato paste
· 1 red chopped onion
· 3 minced garlic cloves
· ¼ teaspoon of thyme
· 100 g baked beans
· ½ teaspoon of black pepper
· ½ teaspoon curry powder
· 2 tablespoon of vegetable oil
· 2 seasoning cubes.
Heat up vegetable oil in a wok on medium heat
Sauté onions for one minute
Stir in minced garlic, sauté till fragrant for just one minute.
Next add curry powder and the bell peppers, stir to combine for 2 minutes
Add grated carrots, stir and combine, sauté for one minute
Stir in tomato paste, add thyme, fresh tomatoes and leave to simmer for 6 minutes
Add baked beans stir to combine. Then turn off heat immediately.
Chakalaka is ready.
