This recipe for a vegan bobotie is a mushroom rich variant of a traditional South African dish. It has a combination of hearty flavors, with hot spices and a fruity component. Only 6 ingredients and 4 easy recipes.
Ingredients:
· 1 lb. (500g) mushrooms chopped.
· 1 onion chopped
· 2 tbsp raisins
· 1 tbsp mango chutney(optional)
· 1 tbsp curry paste.
· 1-2 cans of chickpeas drained
· add your favorite dry or fresh herbs
· whip up your favorite vegan sauce
Direction:
Preheat the oven to 390 degrees/ 200 degrees Celsius
Wash the mushroom and dice them finely. Same as the onion. Sauté the mushrooms and add curry paste, mango chutney(optional), raisins, and herbs. Let simmer for a bit until the water from the mushroom evaporates.
Transfer to a casserole dish, add chickpeas, mix well, and top with your choice of sauce.
Bake for 30 minutes until the sauce is golden brown.
Place in your favorite bread.
