Vegan sweet potato cookie - Mbata

Mbatata are a kind of sweet potato cookie with a texture that lies between a scone and a biscuit. These naturally sweetened cookies are so healthy, they can be had as a snack, dessert or even for breakfast. This recipe is vegan friendly.
· 2 sweet potatoes
· ¼ cup of non dairy milk
· 4 tablespoons plant based butter, melted
· 1 ¼ cup flour, sifted
· 2 teaspoon baking powder
· 2 tablespoons sugar
· ½ teaspoon of salt
· ¼ teaspoon cinnamon.
Peel the sweet potatoes, cut into pieces and cook in salted boiling water until soft, about 30 minutes.
Drain, then mash with a fork.
Preheat oven to 375f/180c
Combine ¾ cup (200g) of mashed sweet potatoes with the milk and melted butter, beat well.
Sift together the flour, baking powder, sugar, salt and cinnamon. Add potato mixture and mix well.
Pour the dough onto a floured surface. Knead, roll out with rolling pin to a thickness of ½ inch (1cm). Cut with a cookie cuter.
Place cookies on a lightly greased baking sheet or lined with parchment paper. Bake for 15 minutes or until cookies are light brown.
Remove from baking sheet and place on wire rack to cool.
Sprinkle additional cinnamon and sugar on top of the warm cookies.
